1.Carrot And Banana Bread
You will need 2 cups white, spelt, or oat flour, 1 tsp baking soda, 1 tsp cinnamon, 3/4 tsp baking powder, 3/4 tsp salt, optional 1/8 tsp nutmeg, 1 1/2 cup mashed overripe banana, 1/2 cup finely shredded carrot, 1/2 cup pure maple syrup, honey, or agave, 1/4 cup milk of choice, 1/4 cup oil or additional milk of choice, 2 tsp pure vanilla extract, optional crushed walnuts, coconut, etc. First heat the oven. Grease the baking tray with margarine. Mix the dry ingredients in a bowl. You can add ground walnuts and coconut if desired. In another bowl, mix the wet ingredients. Combine the mixtures from both bowls to make a dough. Make a rectangular shape of bread from the dough. Bake in the preheated oven for about 37 minutes. Once baked, leave it to cool. Smear it with coconut butter. Grate carrot on butter. Good appetite!
2. Cranberry Orange Bread
To prepare this recipe you need 2 cups spelt, oat, or all-purpose flour, 3/4 cup sugar, unrefined if desired, 2 tsp baking powder, 3/4 tsp salt, 1/2 tsp baking soda, 2 cups cranberries, chopped, 1 cup orange juice, 3 1/2 tbsp oil, 2 tsp pure vanilla extract, 1 tbsp orange zest. Heat the oven. In a bowl, mix the flour, salt and sugar. Then gradually add the orange juice, oil, vanilla extract and cranberries. Combine the ingredients nicely to form a dough. Place the dough in a bowl greased with oil. Bake for about 55 minutes. Then, after baking, add sugar glaze and orange juice.
3. Blueberry Bread
To prepare this bread you will need 2 cups flour (see note), 2 tsp baking powder, 1/2 tsp + 1/8 tsp salt, 1/2 tsp cinnamon, optional, sugar of choice (see note), 1 cup milk of choice, 1 tbsp white or apple cider vinegar, 2 tsp pure vanilla extract, 3 tbsp oil or almond butte. First, turn on the oven to gradually warm up. Mix the dry ingredients in a bowl. In another bowl, mix the liquids except the blueberries. Equalize the mixtures from both bowls, then add the blueberries. Pour into a baking dish smeared with oil. Bake for 45 minutes. Then turn off the oven and leave the bread inside for another 35 minutes.
4. Vegan Lemon Bread
Take 2 cups flour, 1 1/2 tsp baking powder, 3/4 tsp salt, 1/4 tsp baking soda, 1 cup sugar, or xylitol for sugar free, 3/4 cup milk of choice, 1 / 2 cup plain yogurt, such as almond milk yogurt, 1/4 cup oil, or sub applesauce for fat free, 1/4 cup lemon juice, zest of 1 large or 2 small lemons, 1 tsp pure vanilla extract. In a bowl, mix gradually all the ingredients. Mix the ingredients well and place the resulting dough in a greased baking dish. Bake for about 1 hour in a preheated oven. Spread it with coconut butter and powdered sugar if you wish.
