1.Blueberry Almond Chia Pudding
For this chia pudding you will need ½ cup unsweetened almond milk or other nondairy milk, 2 tablespoons chia seeds, 2 teaspoons pure maple syrup, ⅛ teaspoon almond extract, ½ cup fresh blueberries, 1 tablespoon toasted slivered almond. Mix almond milk with chia seeds, maple syrup and almond extract. Cover and refrigerate for at least 8 hours. Stir in the pudding before serving. Garnish with blueberries and almonds.
2. Blueberry-Pecan Pancakes
For preparation of these pancakes you need 1 cup all-purpose flour, ½ cup whole-wheat flour, ½ cup dried blueberries, 1/2 cup finely chopped pecans, toasted, 3 tablespoons light brown sugar, 2 teaspoons baking powder, 1 teaspoon ground cinnamon, ½ teaspoon salt, 2 large eggs, 2 large egg whites, 1 ½ cups nonfat buttermilk, 2 tablespoons canola oil. In a bowl, whisk together the flour, brown sugar, baking powder, cinnamon and blueberries. In another bowl mix eggs, yogurt and oil. Combine the ingredients. Fry the pancakes in a pan with oil. Garnish with honey and blueberries.
3. Blueberry-Lemon Crumb Muffins
You need the following ingredients: ¼ cup all-purpose flour, ¼ cup light brown sugar, 1 teaspoon freshly grated lemon zest, ⅛ teaspoon salt, 2 tablespoons canola oil, 1 cup white whole-wheat flour, ¾ cup all-purpose flour, 1 teaspoon baking powder, ¼ teaspoon baking soda, ¼ teaspoon salt, 2 large eggs, ½ cup light brown sugar, ¾ cup low-fat buttermilk, 3 tablespoons canola oil, 1 tablespoon freshly grated lemon zest, ½ teaspoon vanilla extract or lemon extract, 1 ½ cups fresh or frozen (not thawed) blueberries. Heat the oven. Put paper in a muffin tin. Mix the dry ingredients well in a bowl. In another bowl, mix the wet ingredients. Combine the mixtures from both bowls. Add blueberries. Apply the resulting mixture in the muffin tin. Bake in a preheated oven for about 20 minutes.
4. Blueberry-Lemon Zucchini Bread
Take ½ cup old-fashioned rolled oats, 2 cups white whole-wheat flour, 2 teaspoons baking powder, ¾ teaspoon salt, 2 large eggs, 1 cup sugar, 6 tablespoons grape seed oil, 1 tablespoon lemon zest, 1 ½ cups shredded zucchini, 2 cups fresh blueberries, ¼ cup confectioners’ sugar, 1 teaspoon lemon juice, 1 tablespoon toasted sliced almonds. Heat the oven. Bake the oats first. Then transfer it to a plate. Add flour, baking powder, salt and combine. In another bowl, combine eggs, sugar, oil and lemon zest. Finally add the blueberries. Combine the mixture from the two bowls. Bake in a pan for about 65 minutes. Prepare a glaze of sugar and lemon juice. Spread on bread. Sprinkle with almonds.
