Spring Salad Recipes That Will Keep You Healthy, Slim And Energized

With spring already here the season of the salads is officially opened. As people are getting ready for the upcoming summer, they try to change their usual meals with salads that are considered to be healthier meal option. Here, we are giving you some easy to prepare spring salads that will keep you healthy, slim and energized during the whole day. Try them all. Bon appétit.

1. Caesar Salad

Required ingredients FOR CROUTONS ARE: 2 c. diced or torn bread, 2 tbsp. olive oil, kosher salt. FOR DRESSING you will need :3 oil-packed anchovy fillets, drained and minced (optional), 2 cloves garlic, minced, 2 large egg yolks, Juice of 1/2 lemon, 1/2 c. olive oil. FOR SALAD you will need: 1 large head romaine lettuce, torn into large pieces, 1/4 c. shaved Parmesan, Freshly cracked black pepper. Heat the oven. Put bread smeared with oil in a baking dish. Bake for about 12 minutes until the bread turns golden. Prepare the sauce in a bowl. Mix the garlic, egg yolks and lemon juice. Add olive oil. In another bowl, cut the lettuce, add Parmesan. Add the previously prepared sauce and slices of bread. Season with salt and pepper.

2. Greek Salad

To prepare this salad you need 1 pt. grape or cherry tomatoes, halved, 1 cucumber, thinly sliced into half moons, 1 c. halved kalamata olives, 1/2 red onion, thinly sliced, 3/4 c. crumbled slices, 2 tbsp. red wine vinegar, Juice of 1/2 a lemon, 1 tsp. dried oregano, Kosher salt, Freshly ground black pepper, 1/4 c. extra-virgin olive oil. In a large bowl, mix together the common ingredients, cucumber, olives and red onion. Season with vinegar, lemon juice, oregano, salt and pepper. Add olive oil.

3. Corn Salad

It takes 4 c. fresh or frozen corn, defrosted, 1 c. cherry tomatoes, halved, 1/3 c. crumbled slices, 1/4 red onion, finely chopped, 1/4 c. basil, thinly sliced, 3 tbsp. extra-virgin olive oil, Juice of 1 lime, Kosher salt, Freshly ground black pepper. All you have to do is cut all the ingredients into pieces and put them in a bowl. Season with salt and pepper.

4. German Potato Salad

Take 2 lb. baby potatoes, halved, 6 slices of bacon, 1 red onion, finely chopped, 1/4 c. apple cider vinegar, 2 tbsp. water, 1 tbsp. extra-virgin olive oil, 1 tbsp Dijon mustard, 1/2 tsp. granulated sugar, Kosher salt, Freshly ground black pepper, 8 green onions, sliced. First, put the potatoes in a bowl of water to boil. After they are cooked, leave them to cool and then peel them. Cut them into smaller pieces in a serving dish. Fry the bacon in a pan with olive oil. Add it to the potato bowl, add green onions. Season with vinegar, salt and pepper

5. Best Tuna Salad

It takes 2 tbsp. mayonnaise, 2 tbsp. plain Greek yogurt, Juice of 1/2 lemon, Dash hot sauce, optional, 2 (6-oz.) cans tuna (preferably packed in olive oil), 1/4 small red onion, finely chopped, 2 dill pickles, finely chopped , Kosher salt, Freshly ground black pepper, Lettuce, Bread. In a large bowl, mix mayonnaise, yogurt, lemon juice and hot sauce. Drain the tuna from the oil, then add the horseradish mixture. Add red onions and pickles. Combine the ingredients well. Season with salt and pepper.
